This Cacao Nibs Energy Bites recipe is a perfect solution for satisfying your sweet tooth while supporting weight loss. Using the pure antioxidants of cacao nibs and the satiety power of oats and nuts, these bites are naturally sweetened and provide sustained energy. They are easy to make ahead and store beautifully in the fridge.
Combine Dry Ingredients (2 minutes): In a large mixing bowl, combine the rolled oats, cacao nibs, chia seeds (if using), and sea salt. Stir well to ensure even distribution.
Mix Thoroughly (3 minutes): Use a strong wooden spoon or your hands (wearing food prep gloves if desired) to mix the ingredients. Ensure everything is well combined and the almond butter has coated all the dry ingredients. The mixture should be sticky enough to hold its shape. Tip: If the mixture seems too dry, add a splash of water or milk (1 tsp at a time).
Chill (15 minutes): Cover the bowl and place the mixture in the refrigerator for at least 15 minutes. Chilling makes the mixture firmer and much easier to roll.
Roll the Bites (5 minutes): Remove the mixture from the fridge. Roll the mixture into small, bite-sized balls (about 1.5 inches or 4cm in diameter). This recipe typically yields 10–12 Cacao Nibs Energy Bites.
Coat (Optional): If desired, roll the finished bites in shredded coconut or a small bowl of cocoa powder for a finished look.
Store the completed Cacao Nibs Energy Bites in an airtight container in the refrigerator for up to 1 week.
