This Zesty Sumac Roasted Chicken and Chickpeas dish is the ultimate "healthy-meets-flavourful" weeknight dinner. If you haven't cooked with sumac before, you’re in for a treat. This deep red Middle Eastern spice offers a bright, lemony tang without the acidity of actual citrus, making it a powerhouse for heart-healthy cooking.
Preheat your oven to 200°C (400°F). Line a large baking sheet with parchment paper for easy cleanup.
In a large mixing bowl, toss the chicken chunks, dried chickpeas, and red onion wedges.
In a small jar, whisk together the olive oil, sumac, garlic, cumin, cinnamon, salt, and pepper. Pour this over the chicken mixture and toss until everything is vibrantly red and well-coated.
Spread the mixture in a single layer on the baking sheet. Roast for 25–30 minutes, or until the chicken is cooked through and the chickpeas are slightly crisp.
Remove from the oven and sprinkle generously with fresh parsley. Serve warm on its own, over quinoa, or with a side of crunchy cucumber salad.
